These tiny, tender French kidney beans range in color from pale green to creamy white. Since they are rarely available fresh in the United States, cooks have become used to seeing them dried and canned. In response to requests from Southern California chefs, one of our farmers is growing these European favorites so we all can experience the wonderful flavor of fresh FLAGEOLET BEANS IN POD. They’ re a classic accompaniment to lamb, and will elevate any recipe that calls for dried FLAGEOLETS or Great Northern White beans to a level that will be appreciated by any gourmand. FLAGEOLETS are usually prepared simply, in order to showcase their delicate flavor.
