In the movie Big, Tom Hanks helped BABY CORN growers put their product in the limelight by nibbling on an ear of baby corn at a cocktail party. Cute, but not the best use for this specialty item. The entire ear of baby corn is edible and, as a result, adaptable to many uses. Grill baby corn, husks and all. When they’re just barely warmed through, carefully open the husk, remove the silk, top with chili butter, herb butter or chopped cilantro with a squeeze of lime to serve. Or blanch, slice them cross-wise, garnish a soup or salad, or marinate them in a lime-cumin vinaigrette. The possibilities are endless.
