Description:
Wild Huckleberries are quite similar to Blueberries, but have a tougher skin and hard internal seeds. They are small but mighty and every berry packs a flavorful punch. Their flavor is sharper than that of Blueberries, but they can be eaten and cooked in exactly the same ways. Prized for jams, jellies and baking (muffins, scones, pies, etc., etc.) Wild Huckleberries are wonderful as the feature ingredient in a savory sauce gracing squab or duck. They are not true berries, but drupes, fruits with hard stones. Facciola (1990) remarks that when cooked and served cold, their flavor is like a combination of gooseberry and cranberry sauce, with the slight bitter taste of Grapefruit marmalade. Like any wild creature, Huckleberries are very fragile and should be considered an ingredient. They may arrive a little wet.
