Fans of Fava Beans don’ t seem to mind the work it takes to prepare them. They laud the bean’s distinctive flavor and creamy texture. How much work? you ask. Well, in addition to having to strip them from their sleeping bag of a pod, you must also remove the tender beans from the pale green, bitter skin enclosing them. To do so, strip the beans from the pod. Plunge them into boiling water for one minute, drain, and let cool. Pierce the smooth top of the shell with your thumbnail and squeeze out the bean inside.
Skinned Favas are a brilliant spring green. They can stand on their own as a side dish, or you may add them to vegetable stews and pasta dishes. One pound of pods yields only about ½ cup of beans. They go well with olive oil, yogurt, rosemary, dill, parsley and thyme.
