Created by Leonard Pike, Ph.D., director and founder of the Vegetable Improvement Centre at Texas A&M University, the maroon carrot has an apple-like texture and sugary, sweet flavor — he calls it the Beta-Sweet. Those who like their carrots to taste like carrots are in for a big surprise when they bite into this new breed. Maroon carrots are much sweeter and a touch crisper than their orange cousins. They can be used in any carrot recipe, but left raw, shredded into coleslaw or dipped into zesty sauces, the color, flavor and texture shine brightly. Ironically, before breeders bred in the orange color, carrots were naturally either white or white with a purple rim. Today’s maroon carrots are packed with beta-carotene to enhance the color scheme of your culinary creations. They also supply a healthy dose of antioxidants for those who choose this designer vegetable.
