Description:
Ramps(Allium tricoccum) is a native edible plant which grows wild from Canada to the Carolinas in the rich soil of shady spots such as woods, coves and ravines. Also referred to as wild leeks, they are closely related to the garlic family. Ramps appear in mid-March into May, a significant member of spring’s holy trinity: Fiddleheads, morels and ramps. With their little white bulbs and two long spear-shaped leaves, ramps are loved for their assertive flavor. Historically, ramps were first edible wild greens that appeared following winter, and early settlers welcomed them as a “spring tonic” following months of dried or salted foods. This culinary heritage has been passed from generation to generation. Modern day chefs welcome spring by featuring ramps, raw or cooked, in many dishes that call for leeks, scallions or onions.
