The Citron’s origin is unknown, but it was the first cultivated citrus fruit, with records dating back to 4000 B.C. Citron was a common fruit in the Mediterranean region, and today is cultivated primarily in Sicily, Corsica, Crete, Greece and Israel, as well as a number of Central and South American countries.
Etrog Citron (Citrus medica var. Etrog) is a specific Citron variety that is prized for both ceremonial and culinary purposes. Etrog is used in the waving rituals of the festival of Sukkot, where it is said to represent the heart (because of its shape), and the ideal kind of Jews, who have both knowledge of Torah and good deeds (because it has both a pleasant scent and a pleasant taste). An uncut Etrog will perfume an entire room with its fragrance, and while Jews revere the fruit for its symbolism and place in their religious traditions.
Chefs love the Etrog’s intense sweet, lemony, floral fragrance and flavor. Etrog makes exceptionally lovely candied fruit, marmalade or liqueur, but its flavor really shines when used as counterpoint in many winter dishes, adding wonderful, complex high notes.
