GEORGE’S grows in Bulgaria, France and Spain, and is flown to the United States during the month of May and the first two weeks of June. These European favorites look quite domestic though, like a large button mushroom but they have a wild, creamy, assertive flavor and their thick, dense flesh gives rise to a fresh-baked flour smell. These fungi are delicate and delicious, and add depth to any meat or fish dish. ST. GEORGE’S are also a welcome addition to polentas, green vegetables and omelets.
