Description:
This pepper is celebrated annually at the Espelette Pepper Festival in the Basque region of France. The peppers are harvested in September and hung across balconies to dry out and simultaneously decorate the town for the festival in early October. Espelette Peppers are a deep red and when dried turn to a maroon- red color.
They are mildly hot with a smoky sweet flavor. Espelettes are versatile in the kitchen; try eating them fresh, ground as pepper, pureed, pickled or fried. The peppers are most commonly dried and ground as a spice however the fresh Espelettes are rare to come by and a treat to cook with in the kitchen. Think of these Peppers as a mild substitute for the Jalapeño.
One of the most raved about dishes from the Espelette Festival is the Lobster grilled with fresh peppers in an Espelette spice infused Hollandaise sauce to bring out the Pepper’s smoky-sweet flavor. For dessert, try a bitter-sweet dark chocolate recipe paired with the mild kick of the Espelette.
