Description:
Fennel is native to the Near East and the Mediterranean where it grows wild in dry, stony places. It is an aromatic plant whose taste may remind you of anise or licorice. Pale green, celery-like stems evolve into bright green, feathery foliage. The ribbed leaves are thick and fleshy at the base and form a white to greenish white, bulb-shaped tuber. Fennel is available year round. A sophisticated substitute for celery, fennel can be eaten raw or cooked in a variety of methods such as braising, sauté ing or in soups. This versatile and refreshing vegetable is even delicious when cut into strips, chilled and served as an appetizer with a bowl of olives. The fragrant, graceful greenery can be used as a garnish or snipped like dill and used as a flavor enhancer.
